Kale is a leafy green edible vegetable belonging to the Brassica family that includes broccoli and cabbage. It is very nutritious and full of anti-inflammatory antioxidants, Potassium, and vitamins A, K, and C. It contains nutrients that can support cardiac health, eye health, weight management, cancer prevention, and may help lower cholesterol. Kale can be consumed raw (salad), blended into smoothies, or baked at 350°F until crisp and eaten as chips.
